An easy recipe on how to make mouthwatering pancakes

Nothing beats pancakes for breakfast especially when served on the weekend. Homemade pancakes are easy to make in less than 30 minutes. The basic pancakes recipe consist of a simple batter of flour, eggs, milk, sugar and salt but you can improvise this to make fluffy and light pancakes by adding baking powder for leavening. Here is a step by step recipe on how to make pancakes from scratch.

· A half cup of all purpose flour

· 3.5 tablespoon of baking powder

· 1 tablespoon of salt

· 1.5 cups of milk

· 2 tablespoon of sugar

· 1 egg

· 3tbsp of butter

· A pan or pancake griddle

Preparation time; 10 minutes

Cook time; 30 minutes

In a large bowl, sift the dry ingredients together. That is, flour, baking powder, salt and sugar. Make a well in the middle and gradually add the milk stirring to combine.

Next, add melted butter and egg and mix until smooth but runny.

Now cover the batter with a dry kitchen cloth for about 10 minutes.

Heat a lightly oiled frying pan or griddle over medium heat. To test if the pan is hot enough, splash some water on its surface, if it sizzles, then it is ready.

Scoop about a quarter cup of the batter, pour it on the hot pan or griddle and allow it to brown. This will take about 2 minutes when on medium high heat.

Use a spatula to flip the other surface for the same amount of time or until it as browned.

Serve your pancakes hot with the drink of your choice

Ensure the heat is not high as the pancake may get burnt without being well-cooked.

If you like, you can add fresh blueberries to the batter before cooking. It makes the pancakes even more flavorful.

Once the pancakes are ready, keep them in aluminum foil. This ensures they remain moist, fresh and hot.
